I have many nicknames but the one that started it all is Cinful… Go ahead and let your imagination run wild! Starting Cinfully Simple is an adventure; and though I’m thrilled to be a Professional Foodie, I prefer to think of myself as a Food RE-engineer who cooks Real Food for Real People!
There are few things more fun for me than browsing through three or ten recipes for ideas and then making my own unique Cinfully Simple concoction. I LOVE to experiment with food and to discover new foods and ingredients. I also like to use everyday foods in a different way or somehow make them SIMPLEr by trimming some fat, sugar, carbs, salt or calories here and there and still keep the CINFUL taste—and find ways to make food better, tastier, faster–I truly value CONVENIENCE? Yes. it’s a value. Google it!
Let’s face it, anything tastes good when there’s beer, butter, bacon or deep frying involved. It’s much more of a challenge to make great tasting food when you cut back on those things and, I’m proud to say I’m pretty darn good at it! Of course, I’m not a zealot—I still eat my share of bacon–Praise the Lard!
I might as well get the awkward stuff right out on the table… I AM NOT A CHEF. That is to say, I don’t have formal training, and though I do some gourmet and a lot of ethnic cooking, I also do a lot of “good enough for who it’s for” (as my sis would say) and plenty of “OMG! Quick, raid the fridge and pantry we have company coming in 20 minutes!”
I am what I like to call a dump cook. (Dump Cook: One who doesn’t measure but rather uses taste, touch, look, smell and feel to cook, often never producing the same result twice.) Worried? Don’t be. I’ll capture my recipes for you at right down to the titch, smidge and dash. 😉
Speaking of eating. I have the luxury of traveling. A LOT! And as a result I get to eat in some really great places all over the world. Because of that, I will be able to share with you some of those amazing meals even if only by proxy and description. I will do my best to help you taste the tandoori and savor the bier even if only in your imagination. Mmmmmm….
You should probably know that I’ve been stuck in the corporate mindset for a lot of years and so this blog is a real coming out for me–Not THAT coming out, I did that long ago–And now I’m free from the oppressive shackles of too much political correctness. WooHoo! You see, the corporate world has a way of slicing and dicing creativity so that you walk on eggshells. Years later, minding my P’s and Q’s (pints and quarts of beer if you know your urban legends) has gotten to be quite boring and tedious. Yawn + Eye Roll.
So this is my opportunity to show my tarts to the world… And, now that my food and face are plastered all over the internet I’ll be honest, what you see is what you get! Especially on YouTube. I am well north of 40—Geez, when did THAT happen?! And Lord knows I love to eat, which is evidenced by my POST-40-PLUS-30 body! But hey, I am healthy, happy, active and well-loved so I’m not worried. I’m just gonna let menopause do it’s thing for a while and hope at some point it will give me my body back! Besides, my friend Sophie told me right from the start that she didn’t want to see me on video all dressed up and with make-up all the time. I think her exact words were, “I want to see you in your PJs with bed head looking just like you are when you are cooking in my kitchen!” Yes, I do cook in other people’s kitchens! That’s what friends are for, Right?
So, why Cinful with a C? I’m going to let you in on a little secret. I have my college friend Casey to thank for that one. Apparently I had a bit of a reputation in college for helping people push their perceived limits and it earned me the fabulous nickname of CINFUL. Did I mention that my last (20+ year) career was as an executive coach helping people push past their limits? Guess old habits die hard!
I have always cherished the nickname; so much so that I even named my waterski boat “CINFUL”! Truth be told I am also a Gemini and if you know your astrology, that means there’s a good me and a Cinful me. What can I say, more me’s make life more interesting!
At one point, I wanted to call this site Messy Girl Cooks because I am messy in the kitchen. I always keep a “messy girl” towel around that gets all gross from my eggy, greasy cookin’ hands. Then I realized that messy girl dot com was actually a porn site! WHOOPS! I can hear it now… “Honey, I swear I was just looking for a recipe for dinner!” So instead, because I am truly a creature of chaos, I named this blog for something that I aspire to: A life that is Cinfully Simple.
Bottom line, I chose this name because many of the foods I make taste complex and wonderfully bad for you (CINFUL) but often are quite easy to make and/or a little healthier (SIMPLE)!
With Cinfully Simple, I now have a way to combine so many of the things I love and am good at in a way that will benefit others. I cook #RealFood4RealPeople and you can too! And that is well, Cinfully Simple.

My Passions (yep. plural.): Cooking, singing, water, waterskiing, wake boarding, travel, adventure, snorkeling, exploring, anything with a beach, time-share cooking in foreign countries, grocery shopping (not a joke), reading fiction, giving people an experience they won’t soon forget, helping others succeed and feel good about themselves, munching a great salty crunchy snack, slurping a good adult beverage on a hot day, slurping a good hot adult beverage on a cold day, having appetizers or even breakfast for dinner, eating pizza for breakfast (cold is the only way to go).
Little Known Facts About Me: To date, I have no regrets in my life. (Completely true!) I am a geek-lite which means I love technology and am good at it. I was my college mascot (yep, big orange sleeping bag with fur jumping around outdoors in Texas in the middle of August –Shout out to SHSU!) I once sang on a music CD and every once in a while a great band I know lets me jam with them (famous singer is totes my dream job). I live on a private water ski lake in land-locked Colorado (which BTW makes a great backdrop for #FoodWithAView and #BoozeWithAView). I have bungee jumped off of the Kawarau Bridge in New Zealand, swam with sharks in Bora Bora, snorkeled in Thailand, swam with dolphins in Zanzibar, sky dived, hiked the Grand Canyon and climbed the highest 14er in Colorado (14er for you low-landers is a 14,000 foot mountain). My degree is in Journalism/Communications (Look Mom and Dad, I’m finally using it!). My sister and I were born on the same day, both Gemini’s but not twins, although which one of us is the “good sister” is often up for grabs. “You are!” “No, you are!” Okay, she may be the “good” sister, but I’ll always be younger! HA! And finally, if made to choose I’d pick French fries over chocolate; although French fries dipped in dark chocolate would probably send me straight to heaven!
Signature Color: There is ONLY one color. GREEN! I couldn’t put this in “little known facts” because everyone who knows me knows it. In fact most people call it CINDY GREEN (Lime, Avocado, Apple, Tree Frog)—All the bright ones. Not so much neon, but I wouldn’t turn it away. I like some of the darker ones as well but frankly I just love bright colors. And Green is a Happy color. A good Feng Shui color and if I do say so myself it looks damn good on me! I have green shoes, green purses, tops, bathing suits, suitcases, kitchen utensils, toenails… I admit it’s a bit of an obsession but it makes me easy to buy gifts for. “What is it?” “Doesn’t matter, It’s green, she’ll like it.” Walking through malls and even running through airports I can spot something green in the back of a shop and always have to check it out—even at the risk of missing my flight! Green also pairs well with purple, red, orange, aqua and even brown and gray. You will be seeing a lot of green from and on me, so I hope you like it too!
My Past Lives: I owned a very successful organizational development firm with clients all over the world. I co-authored a well known book on executive coaching. I once had a pretty lucrative and high-level job at a fortune 50 company. I was a junior high, high school and college teacher, I’ve worked for non-profit organizations including a battered women’s shelter. I was once a swim coach, a diver and a lifeguard. I’ve lived in Ohio, Texas, Oklahoma and Colorado and spent a lot of time in Pennsylvania, Florida, Minnesota, Arizona, Iowa, Washington, Oregon, California and now Mexico—enough to know my way around.
Things Left to Do: Snowboard (hard to believe I haven’t done this yet), travel to more exotic (and normal) places, fly a seaplane or at least fly IN a seaplane (preferably over WARM water), swim with whale sharks (July 2015, BABY!), make dinner for then enjoy that dinner with Ellen Degeneres & Portia de Rossi–though I don’t cook a lot of vegetarian, we could probably have a hell of a Happy Hour or a liquid dinner. I can hear myself now, “Dinner is Poured, ladies!” Psst! If you know E & P could you put a good word in for me? Thanks. And last but not least, I wouldn’t mind singing with someone cool and famous at least once, even if it’s as a doo-wop girl–HELLO, Meghan Trainor! I have meet and greet tiks for her #MTrain concert in Denver in July–SO crossing my fingers! After that I can retire to Mexico and laze on the beach without any more agendas, having had all of my dreams fulfilled. Ahhhhh…
