My Garden Fresh Cucumber Tomato Salad has such a fresh, farm to table taste that you’d never believe how easy it is to make! 

This Garden Fresh Cucumber Tomato Salad is a new twist on an old favorite from my youth. Back then it was fresh cucumbers from the garden, sliced onion and tomato soaked in white vinegar, salt and pepper. BUT, as you know, we DO NOT DO ONIONS in the Cinfully Simple household! SO, I’ve taken some liberties with Mom and Grandma’s old recipe. And while I was at it, I took a few more!

One thing I can assure you of is that this Garden Fresh Cucumber Tomato Salad is still a summer favorite that makes a terrific salad, snack or side dish with everything from hamburgers to holy basil! Try it today!


Easy Eats - Garden Fresh Cucumber Tomato Salad

This Garden Fresh Cucumber Tomato Salad is a new twist on an old favorite. It's Easy, fresh, colorful and OH SO GOOD!

  • 2 cucumbers peeled and chopped
  • 20 + grape tomatoes sliced half
  • 1/2 c chopped cilantro optional
  • 3/4 c seasoned rice vinegar
  • salt
  • pepper


  1. Place cucumbers, tomatoes and cilantro in a container with a sealable lid.
  2. Pour in rice vinegar, salt and pepper to taste.
  3. Place lid on container and shake well to coat the veggies.
  4. Place in fridge.
  5. This salad can be served immediately but tastes best when it’s had time to marinate for a while. A few hours or even a few days!
  6. Shake again before serving.


We love options! If you LOVE onions as much as we DISLIKE them, feel free to put those baby’s in there. That’s what playing with your food is all about! And if you want an asian twist to this salad, add 1/2 Tablespoon of fish sauce and a squeeze of lime!
