What do you make when you are staying at a timeshare with a limited kitchen?  How about Huevos Rancheros?  Huevos Rancheros is a pretty easy dish of fried eggs covered in (you can use my Legendary Salsa Recipe) and served with refried beans and tortillas.  We used our leftovers and even added our left over dinner potatoes to this one to make it great!

I loved your cooking, and your fabulous costume–you must be so much fun to go on a timeshare vacation with!!
Me and a friend are going on vacation in Sanibel Island Florida at one of her timeshares, and I was so inspired by your cooking Huevos Rancheros! YOU are a DOLL!

    Well! You seriously just made my year–And my Mexican evening– cuz’ yes, I’m here again. What can I say? Unlike our new president-elect, I love Mexicans, their country and their food. Seriously, how can you not like the people who created those huevos rancheros? WHAT?!?!
    Here’s a little TMI for you: I was married to my (now ex) husband on Sanibel Island.
    I hope you have a great trip. Timeshares are great for trying out local fare. Get yourself one of those big fat bright green (and lower in fat) florida avocados and make my Holy Camoly Gucamole recipe while you are there–you should only need one of those bigguns.
