I’ve gotta tell ya kids, I do not write well in the morning! My ADD and menopause fogged brain takes a painfully SLOW elevator ride to the top until about 10 or 11 AM when I finally start to hit my stride. But I’ll do anything for you, my #Cinners! So here I am at 7 AM mainlining caffeine, trying to get this post out before you leave work early on this #TGIF, to celebrate one of my favorite holidays, National Tequila Day!

Remember that last trip to Mexico? Remember that time in college? This one time at band camp… Don’t judge, we’ve all been there at least once! Like Meghan Trainor says in her song Walkashame, “Don’t act like you haven’t been there!”
Double Portions (DP) and I recently got to meet Meghan before her concert in Denver. It was a BA-LAST! And we’re not your average groupies either. You would never have known we were not the starstruck type given we were the ONLY two 40-somethings there without kids, waiting for hours in a sea of 15-year olds to see a 21-year old budding megastar! And WE DIDN’T CARE! The experience and the concert were fabulous and Meghan is amazingly talented! Of course she didn’t let me sing All About that Bass with her—HOW RUDE!—Maybe Next time! Seriously though, if #Mtrain comes to your city, I don’t care how old you are, you GOTTA GO!
Now back to the real reason we are here! DA DA DA DA DA DA DA DA! TEQUILA…
I’m Makin’ Magic MangoRita’s for National Tequila Day!
In a previous post for Bah Humbug Pumpkin Butterscotch Crunch Scones, I poked fun at holidays and made comments about my anti-holiday tendencies, much to the dismay of my Dad. Whoops! Well, I’m here today to edit those comments. I am still not huge on the hoopla surrounding traditional holidays, but if we’re talking food or booze holidays, I’m ALL IN! Just as I will WORK for food, booze and kitchen gadgets, I will WRITE for food and booze holidays! Bring em’ on!
Did you know that almost EVERY day of the week represents a food or beverage holiday of some sort? Some days even have multiple holidays. There are even calendars you can upload that remind you of these days. How else do you think I know it’s National Tequila Day? You just thought I was a lush, right?
National Tequila Day is a very special holiday for two reasons: 1) It’s in the middle of the summer and what could be better than a Magic MangoRita on a hot summer day? 2) I LOVE a good tequila—I know, SHOCKING—And that means you must love it too!
But true to form, a NORMAL MARGARITA just won’t do for this prestigious holiday. Besides I’m not wired for normal. So I’ve taken my good friend Rae Ann’s famous Margarita recipe and RE-Engineered it with frozen MANGO to make this luscious, icy, sweet/salty Magic MangoRita for National Tequila Day!
Because I am off in about 50 different directions these days—did I mention the ADD? I realized just two days ago that this momentous #TGIF was National Tequila Day! I’m such a planner. So I enlisted the help of DP—OK I begged—Because life is no fun unless your partner is going in 50 different directions with you!
You see, as a food blogger, I have more food porn and recipes than time! Sorting through the archives late last night, we realized we were sitting on a gold (tequila) mine! Last year, months before the Cinfully Simple website was even launched, we started capturing videos of me cooking. This particular video was filmed on this very day, one year ago with my mom-in-law, Ora, who LOVES her a good margarita. So NOW we’re not just celebrating a national holiday, but also the anniversary of a national holiday! Life is good like that.
I honestly think this is the BEST margarita/MangoRita I’ve ever had! I hope you think so too! I’ll bet your wondering, “Where’s the MAGIC in the Magic MangoRita?” The magic is in how often your guests will ask for refills!
- 1 can frozen limeade (keep frozen)
- 1½ c. ice
- ¾ bag of frozen mango (keep Frozen)
- 1 12 oz can of sprite, diet sprite or 7-up
- ¾ can of good tequila (no hangover headaches with this recipe)
- Course salt or sugar for rims
- 1 lime sliced for garnish
- Place all ingredients except for lime and salt/sugar in blender.
- Puree on high until frothy and smooth.
- Dip the top rim of glasses into the mixture to wet
- Dip rims into salt or sugar spread out on a plate or in a flat bowl
- Garnish with lime slice
